These brownies are so easy to make, are vegan and gluten-free, AND don’t taste anything like black beans. I originally sought out a black bean brownie recipe because my kids won’t eat beans. Even though this is a sweet dessert with plenty of maple syrup, I thought it would be a good experiment to expose the kids to some beans.
Now that I’m gluten-free, there are always some of these in my freezer…I eat them almost frozen, but they are, of course, even more delicious warm.
Blender Black Bean Brownies

1 15-oz can black beans, rinsed & drained
2 Tbsp cocoa powder
1/2 cup gluten-free rolled oats
1/4 tsp salt
1/2 cup maple syrup
1/4 cup coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup vegan chocolate chips
Preheat the oven to 350F. Combine all ingredients except for the chocolate chips into the blender or food processor. Blend until smooth. Stir in chocolate chips and pour into greased 8×8 pan. Cook 20 minutes, until a toothpick comes out mostly clean and the sides start to pull away from the pan. Let cool, then cut into 1 1/2″ squares.
